Eat like at the Badehotellet – a historical taste journey to the 1920s and 1930s

Take a seat at the table and let the aroma of artichokes, roast veal and diplomat pudding take you back in time.
In 2025, The Green Museum, in collaboration with Restaurant Den Gamle Stald, has embarked on a new series of historical dinners. This time based on the popular TV2 series “Badehotellet”. The menu and stories have been carefully put together by our own food historian, Bettina Buhl, who as historical food consultant on the series 'Badehotellet' has had a very special insight into the culinary universe of the 1920s and 1930s.

The Roaring 1920s and the Troubled 1930s
The first dinner in the series will take place on February 28 (6:00 PM–9:00 PM). Here we focus on the period from the exuberant “roaring twenties” to the more troubled 1930s.
The menu:
Phased artichokes
Roast veal in vin blanc with pomsaute and stuffed tomatoes
Diplomat pudding
Along the way, you can look forward to vivid stories about:
How food was prepared for the “better bourgeoisie” at the seaside hotels
The love of the sea and the healthy life by the coast back then
The historical events that created contrast between the festive lifestyle of the 1920s and the more troubled tone of the 1930s
The dark period of occupation and liberation
The second dinner is being held on May 4 (6:00 PM–9:00 PM), which in 2025 marks the 80th anniversary of Denmark's liberation. The menu has not yet been announced, but Bettina Buhl will reveal how Danish seaside hotels – and cuisine in general – coped with the challenges of the war.
Expect exciting stories about:
- The survivability of food when resources were scarce
- The role of seaside hotels during a time when the country was occupied
- The celebration and joy that arose in the wake of liberation
More than just food
For both history buffs and culinary adventurers, these evenings will be a unique opportunity to learn more about Denmark's cultural history, while enjoying the food, exactly as it might have been served to holidaymakers along the Danish coasts almost 100 years ago.
